Grilled Steaks With Tomato-Onion Salad

Ingredients
1 red onion, sliced into ¼-inch rounds3 tablespoons extra-virgin olive oil 4 strip steaks, about 1 inch thickSalt and pepper 6 plum tomatoes, cored and sliced into ¼-inch rounds2 tablespoons capers, rinsed¼ cup chopped fresh basil 2 tablespoons red wine vinegar
Instructions
- Brush onion slices with 1 tablespoon oil and grill over hot fire until lightly charred, about 2 minutes per side. Transfer to large bowl. Season steaks with salt and pepper and grill over hot fire until well browned and cooked to desired doneness, 4 to 8 minutes per side. Transfer to plate, tent with foil, and let rest 5 minutes.
- Add tomatoes, capers, basil, remaining oil, and vinegar to bowl with grilled onions and toss to combine. Season with salt and pepper. Transfer steaks and tomato salad to individual plates. Serve.

Why This Recipe Works
Grilled strip steak recipes are simple enough, but we wanted to dress up ours up with a quick summer salad. We tried our grilled steak recipe with salted and unsalted capers, and found that salted capers required 30 minutes of soaking before they were palatable, while unsalted, brined capers simply needed to be drained before use. Well-marbled strip steak is great on the grill, but the more economical top sirloin steak also cooks well on the grill and can make a practical substitute in our Grilled Steaks with Tomato-Onion Salad recipe.
