Bibb Lettuce Salad with Yogurt-Dijon Dressing

Ingredients
¼ cup extra-virgin olive oil 1 small shallot, minced2 tablespoons plain yogurt 2 tablespoons Dijon mustard 2 tablespoons cider vinegar Salt and pepper 1 head Bibb lettuce (8 ounces), leaves separated and torn4 radishes, trimmed and sliced thin1 Bosc pear, halved, cored, and sliced thin½ cup walnuts, toasted and chopped coarse3 scallions, sliced thin on bias
Before You Begin
Use a slightly firm pear for this salad; very ripe pears will fall apart.
Instructions
- Whisk oil, shallot, yogurt, mustard, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in small bowl. Combine lettuce, radishes, pear, walnuts, and scallions in large bowl. Toss salad with half of dressing. Season with salt and pepper to taste. Serve, passing remaining dressing separately.

Why This Recipe Works
Because of its delicate texture and mild sweetness, Bibb lettuce is an excellent choice for a salad base. However, its delicate flavor is easily overpowered. To balance the gentle flavor of the green, we tamed a standard Dijon vinaigrette with whole-milk yogurt. To make the salad more complex, we added pears for a sweet, seasonal element, radishes for a peppery bite, and toasted walnuts for a savory crunch.
