Bourbon-Butter Steak Tips with Maple Mashed Sweet Potatoes

Bourbon-Butter Steak Tips with Maple Mashed Sweet Potatoes

Ingredients

2 pounds sweet potatoes, peeled and cut into ½-inch pieces3 tablespoons vegetable oil Salt and pepper ¼ cup heavy cream ¼ cup maple syrup 1 ½ pounds sirloin steak tips, trimmed and cut into 2-inch chunks½ cup bourbon 2 teaspoons cider vinegar 2 tablespoons unsalted butter 1 tablespoon chopped fresh chives

Instructions

  1. Combine potatoes, 2 tablespoons oil, 1 teaspoon salt, and 1/2 teaspoon pepper in large bowl. Cover and microwave until potatoes are tender, about 10 minutes, stirring halfway through cooking. Add cream and 3 tablespoons maple syrup and mash until smooth; cover and set aside.
  2. Meanwhile, pat steak tips dry with paper towels and season with salt and pepper. Heat remaining 1 tablespoon oil in 12-inch skillet over medium-high heat until just smoking. Add steak and cook until well browned all over and meat registers 125 degrees (for medium-rare), 6 to 8 minutes. Transfer to platter and tent loosely with foil.
  3. Off heat, add bourbon, vinegar, and remaining 1 tablespoon maple syrup to skillet; return to medium-high heat and cook until slightly thickened, about 3 minutes, scraping up any browned bits. Off heat, whisk in butter and season with salt and pepper to taste. Return steak and any accumulated juices to skillet and toss to coat. Sprinkle with chives and serve with mashed potatoes.
