1 ripe avocado, cut into ½-inch pieces1 ounce feta cheese, crumbled (¼ cup)1 tablespoon extra-virgin olive oil 1 teaspoon lime juice ⅛ teaspoon salt ⅛ teaspoon pepper

- Using fork, mash all ingredients in medium bowl until mostly smooth.

Why This Recipe Works
Avocado is mild and rich, so we use salty feta cheese and tangy lime juice to turn it into flavorful burger spread. Salt and pepper season the mixture and a bit of extra-virgin olive oil brings all of the flavors together. To offer some textural contrast to the burger, we don’t puree them but instead mash them with a fork until the mixture is mostly smooth.
