In the Library with Toni Tipton-Martin: Popcorn Chicken

In this video, Toni Tipton-Martin tells the tale of “junk food genius” and popcorn chicken inventor, Eugene Gagliardi Jr.

Popcorn chicken has a well-earned home among other snackable takes on fried chicken: chicken nuggets, chicken tenders, and chicken wings.

While chicken nuggets are often made of blended chicken formed into disks, popcorn chicken is made from bite-size chunks of white meat that are breaded, battered, and fried into golden, crispy, popcorn-size pieces.

Cooks Country’s Editor in Chief Toni Tipton-Martin gives a more detailed story of the origins of this snack in the video below.

Check out our recipe for popcorn chicken, inspired by Gagliardi’s invention.
