DIY Bull-Dog Sauce

Ingredients

⅓ cup Worcestershire sauce ⅓ cup ketchup ¼ cup molasses 1 teaspoon garlic powder ¼ teaspoon kosher salt ¼ teaspoon ground cinnamon ¼ teaspoon pepper Pinch ground cloves

Before You Begin

Do not use blackstrap molasses here, as it is too bitter.

Instructions

  1. Whisk all ingredients in small saucepan until no lumps remain. Bring to simmer over medium-high heat. Reduce heat to maintain gentle simmer and cook until slightly thickened, about 5 minutes. Let cool completely before using. (Sauce can be refrigerated for up to 1 month.)

Why This Recipe Works

Bull-Dog Sauce is a sweet and tangy bottled Japanese condiment that’s commonly drizzled over chicken katsu or tonkatsu. We use a combination of Worcestershire sauce, ketchup, and molasses to mimic the product’s acidity, sweetness, and body. Garlic powder adds a touch of savoriness while cinnamon, pepper, and cloves add dimension.
