Ingredients

1 cup plain whole-milk yogurt ¾ teaspoon ground cumin ½ teaspoon sugar ½ teaspoon table salt ⅓ cup finely chopped onion 1 tablespoon chopped fresh cilantro

This recipe is best with plain whole-milk yogurt. Do not use low-fat, nonfat, or Greek yogurt in this raita.

Instructions

  1. Whisk yogurt, cumin, sugar, and salt in bowl until thoroughly combined. Stir in onion and cilantro. Season with salt to taste. Serve.

Why This Recipe Works

This onion raita is a simple, stir-together recipe adapted by us from Kaumudi Marathé's The Essential Marathi Cookbook (2009). It works wonderfully when paired with Marathé's Kombdi, Jira Ghalun (Cumin-Scented Chicken), where the cooling, creamy yogurt balances the rich, spicy sauce and the earthy smokiness of the cumin.
