Spicy Red Pepper Mayonnaise

Ingredients

2 teaspoons vegetable oil 5 garlic cloves, minced¾ teaspoon smoked paprika ¾ teaspoon ground coriander ¾ teaspoon ground cumin Pinch to ⅛ teaspoon cayenne pepper ⅓ cup jarred roasted red pepper, patted dry and minced¼ teaspoon table salt ¼ teaspoon sugar 3 tablespoons mayonnaise ¼ teaspoon grated lime zest plus ½ teaspoon juice

Before You Begin

For a less spicy mayonnaise, use just a pinch of cayenne pepper.

Instructions

  1.  Heat oil in 8-inch skillet over medium heat until shimmering. Add garlic and cook, stirring frequently, until garlic just starts to brown, about 2 minutes. Add paprika, coriander, cumin, and cayenne and cook, stirring constantly, until fragrant, about 30 seconds. Immediately transfer to bowl. Stir in red peppers, salt, and sugar and refrigerate for at least 5 minutes.
  2.  Stir mayonnaise and lime zest and juice into red pepper mixture and serve.
