1 (¼-inch-thick) slice lemon 3 ounces baby arugula 2 mandarin oranges, peeled4 celery ribs

  1. On low speed, process lemon through juicer into storage container or serving glass. Increase speed to high. In order listed, process remaining ingredients. Stir to combine before serving.

Why This Recipe Works

Though you might expect this juice to be sour, the dominant flavor comes from spicy arugula. Baby arugula has a particularly mustardy punch that hits the mouth and travels up through the nose to awaken your taste buds and senses. We loved this quality but wanted to tamp it down slightly to make it more drinkable. Juiced celery ribs gave our juice a grassy and savory backbone that relaxed the arugula taste but still kept the flavor distinctly green. To tone down the sting of vegetal pepperiness but still keep the greenness front and center, we tested different citrus fruits that would brighten and gently sweeten the drink. Mandarin oranges are sweeter than standard oranges and therefore mix delightfully with fresh lemon juice for a complex and punchy citrus flavor without a sour shock.
