For the most dramatic presentation, we recommend using a tall, narrow 12-ounce collins (or highball) glass.
Instructions
- On high speed, process ginger, orange, and beets (in that order) through juicer into 1-cup measuring cup.
- Fill 2 collins glasses with ice. Add ¼ cup juice and ½ cup seltzer to each and let sit for 30 seconds. Slowly pour in ¼ cup seltzer (thick foam will rise above rim). Serve.

Why This Recipe Works
Juices can be combined with seltzers to make lighter, bubblier versions of these good-for-you beverages. To start, we juiced earthy beets for their depth of flavor and rich color, along with the spicy heat of ginger and the sweet acidity of orange. A 2-inch piece of ginger on its own is very strong and overpowering, but it was delectable once diluted by the seltzer. We used a lower ratio of juice to seltzer because the taste of the beets was so potent that it didn't require much to flavor the water and make an enjoyable drink. The inspiration for our drink's name came after we found that the bubbles from the seltzer amplified the foam from the beet juice, creating a massive head of pink foam on top of the drink.
