Watermelon-Mango Skewers with Tajín

Ingredients

2 tablespoons lime juice, squeezed from 1 lime1 teaspoon sugar ¼ teaspoon table salt 12 ounces seedless watermelon, cut into 24 (1-inch) pieces8 ounces mango, cut into 24 (1-inch) pieces24 fresh mint leaves (optional)1–2 teaspoons Tajín seasoning

Before You Begin

You can use precut watermelon and mango sold in containers at the grocery store for this recipe, or ask an adult to help you peel and prep the fruit before cutting it into 1-inch pieces. We used Tajín Clásico when developing this recipe; you can find it in the Latin section of most grocery stores or in Latin markets. If you can’t find it, look for “chili-lime salt” in the spice aisle.

Instructions

  1. In large bowl, use rubber spatula to stir lime juice, sugar, and salt until sugar and salt dissolve. Add watermelon and mango and stir until fruit is coated. Let sit for 5 minutes.
  2. Assemble fruit skewer following photo, “Step-by-Step: How to Skewer Fruit”. Repeat with remaining fruit and mint (if using) to make 8 skewers total.
  3. Place skewers on serving platter. Sprinkle evenly with Tajín on all sides. Serve.

Why This Recipe Works

Ready to take simple fruit salad to the next level? Look no further than these watermelon-mango skewers. We toss mango and watermelon chunks with lime juice, sugar, and salt and let the fruit sit for a few minutes to soak up all that flavor. Then we load the fruit onto skewers before sprinkling them with Tajín, a zesty Mexican seasoning blend. Fruits come in all colors, including the orange mango and red watermelon in this recipe. Challenge your young chef to brainstorm fruits for every color of the rainbow. (Red: strawberries, raspberries, cherries; Orange: oranges, apricots, cantaloupes; Yellow: bananas, pineapples; Green: green grapes, honeydew, kiwis; Blue: blueberries; Purple: blackberries, plums, red grapes)
