Strawberry Negroni

Ingredients

5 ounces strawberries, hulled and quartered, plus strawberry slices for garnishing4½ ounces London dry gin 4½ ounces Campari 4½ ounces sweet vermouth

Before You Begin

You can store the cocktail in a 1-quart Mason jar instead of a bottle if you’d like.

Instructions

    for the infused spirits

  1. Combine 5 ounces strawberries, hulled and quartered; 4½ ounces London dry gin; 4½ ounces Campari; and 4½ ounces sweet vermouth in 4-cup liquid measuring cup or large container. Cover and place in 50- to 70-degree location away from direct sunlight. Let gin mixture sit until flavors meld, about 3 days. Strain gin mixture into glass bottle or large Mason jar; discard solids. (Gin mixture can be covered and stored in refrigerator for up to 1 month.)

  3. Gently shake bottle to recombine gin mixture. Add 3 ounces gin mixture to mixing glass, then fill three-quarters full with ice. Using spoon, stir until mixture is just combined and chilled, about 30 seconds. Strain cocktail into chilled rocks glass half-filled with ice or containing 1 large ice cube. Garnish with strawberry slices and serve.

Why This Recipe Works

Infused cocktails often involve introducing subtle flavor to the entire drink by manipulating a single ingredient in the formula—usually the spirit. A common modern cocktail is a strawberry Negroni, made with strawberry-infused Campari. We love the fruity addition of strawberry to this drink, but it’s hard to detect among the already masterfully balanced contrasts in a classic Negroni—bitter and sweet, aromatic and spirit-forward, herbal and citrusy. We think the strawberry flavor needs to be bold to compete with these strong flavors. Instead of infusing just one component, the gin or the Campari, we take a different approach: We build the cocktail first and then infuse the whole thing with fresh strawberries. The effect is akin to using the freshest strawberry liqueur imaginable, without upsetting the balance of a drink that’s already pretty perfect.
