You will have leftover simple syrup; the rest can be refrigerated for up to 1 month for use in other cocktails; shake well before using. You can garnish with fresh, dried, or dehydrated pineapple slices in addition to the mint, if desired.
Instructions
- Whisk ¾ cup sugar and 5 ounces warm tap water in bowl until sugar has dissolved. Let cool completely, about 10 minutes, before transferring to airtight container.
- Add 3 ounces unsweetened 100 percent pineapple juice, 1 ounce peach nectar, 1 ounce lime juice, 1 ounce simple syrup, and ⅓ cup fresh mint leaves to cocktail shaker, then fill with ice. Shake mixture until just combined and chilled, about 5 seconds. Double-strain cocktail into chilled rocks glass half-filled with ice. Top with additional ice and garnish with mint sprig. Serve.

Why This Recipe Works
Inspired by a classic tropical cocktail called The Missionary’s Downfall, which features rum and peach liqueur, this drink certainly won’t lead to anyone’s downfall. The peach, here in the form of peach nectar, is a nice addition to familiar tropical ingredients, pineapple and lime juices. Mint complements all of the fruit flavors within, and the drink’s smooth texture makes it incredibly pleasing and sippable.
