Ingredients

2 ounces unsweetened 100 percent pineapple juice 1 ounce Cynar 1 tablespoon cream of coconut ¼ ounce Simple Syrup

Instructions

  1. Add 2 ounces unsweetened 100 percent pineapple juice, 1 ounce Cynar, 1 tablespoon cream of coconut, and ¼ ounce simple syrup to cocktail shaker, then fill with ice. Shake mixture until fully combined and well chilled, about 15 seconds. Double-strain cocktail into chilled cocktail glass and serve.

Why This Recipe Works

We love a piña colada as much as the next person, but sometimes we’re in the mood for something less sweet. Stormy Seas is essentially what you get if a piña colada ditched the rum and replaced it with a lower-alcohol, bitter amaro, Cynar. This is a fine example of a drink that liberates amari from the land of stirred cocktails—and, as in the Jungle Bird, the amaro gets along quite well with the flavors of tropical drinks.
