Easy Apple Pie

Ingredients

2 tablespoons unsalted butter, softened, plus 8 tablespoons (1 stick) unsalted butter, melted¾ cup fresh bread crumbs (see note)3 Granny Smith apples peeled, cored, quartered, and cut crosswise into thin slices2 Braeburn apples (see note), peeled, cored, quartered, and cut crosswise into thin slices1 ¼ cups (8¾ ounces/248 grams) sugar 1 cup (5 ounces/142 grams) plus 1 tablespoon all-purpose flour 1 ½ teaspoons ground cinnamon ¼ teaspoon ground nutmeg ½ teaspoon baking powder ½ teaspoon salt 2 large eggs, lightly beaten2 tablespoons sour cream

Before You Begin

To make the bread crumbs, grind 1 slice of hearty white sandwich bread in a food processor to fine crumbs. In step 3, be sure that the melted butter is still slightly warm when whisked into the dry ingredients. Golden Delicious or Gala apples can be substituted for the Braeburn.

Instructions

  1. Adjust oven rack to middle position and heat oven to 325 degrees. Grease bottom and sides of 9-inch springform pan with 1 tablespoon softened butter. Melt remaining 1 tablespoon softened butter in large nonstick skillet over medium heat. Add bread crumbs and toast, stirring occasionally, until golden brown, about 3 minutes. Transfer crumbs to bowl and let cool.
  2. Toss apples, 2 tablespoons sugar, and 1 tablespoon flour in large bowl. Following photos 1 and 2 below, coat bottom and sides of prepared pan with toasted crumbs, then arrange apples in pan.
  3. Combine 1 cup sugar, remaining flour, cinnamon, nutmeg, baking powder, and salt in large bowl. Whisk in eggs, sour cream, and melted butter until smooth. Following photo 3, pour batter evenly over apples. Sprinkle remaining sugar evenly over batter and bake until deep golden brown and crisp, 70 to 80 minutes. Transfer to wire and cool completely, at least 1 hour. Remove ring, slice, and serve.

Why This Recipe Works

To build an Easy Apple Pie with structure and a crisp crust, we turned to toasted bread crumbs. To thicken the batter, we increased the amount of flour and added baking powder to give it some lift. A bit of sour cream also gave the batter a welcome tang.

Reducing the oven temperature allowed the pie to cook longer, giving the apples time to gently soften as the batter set. A mixture of tart and sweet apples made for a nicely balanced pie filling—tasters preferred a combination of tart Granny Smith and sweet Braeburn apples. Using a springform pan instead of a pie plate prevented the batter from spilling over the edge and made it easier to serve the pie without wrecking the thin bottom crust.
