Roasted Tomato Relish

Ingredients

1 cup of Roasted Tomatoes Roasted Tomatoes, chopped coarse, plus 1 tablespoon reserved tomato oil1 small shallot, minced¼ cup chopped fresh cilantro ¾ teaspoon red wine vinegar ½ teaspoon capers, rinsed and minced

Before You Begin

This relish can be used to top bruschetta, can be served with a lean protein like chicken or pork tenderloin, or can even dress up scrambled eggs or polenta.

Instructions

  1. Combine all ingredients in bowl and season with salt and pepper to taste.
