Everything Bagel–Seasoned Buns

Ingredients

4 brioche hamburger buns 1 large egg, lightly beaten2 ½ teaspoons everything bagel seasoning

Before You Begin

You can use store-bought everything bagel seasoning, or you can make your own; to do so, combine ½ teaspoon each of sesame seeds, poppy seeds, dried minced garlic, dried onion flakes, and kosher salt. We like to use these buns for our Brunch Burgers.

Instructions

  1. Adjust oven rack to middle position and heat oven to 350 degrees. Arrange buns on rimmed baking sheet. Brush tops of buns with egg (you needn’t use all of it) and sprinkle with everything bagel seasoning.
  2. Bake until egg is dry and set, about 5 minutes. Serve.

Why This Recipe Works

Everything bagel–seasoned brioche buns provide extra breakfast flavor and a bit of crunch for our Brunch Burgers (though they’re a welcome addition to any burger or sandwich in need of zhuzhing up). To get the seedy coating to stick, we brushed a thin layer of beaten egg over the buns, sprinkled on a generous pinch of everything bagel seasoning, and baked the buns until the egg wash was just set.
