Before You Begin
Any variety of cucumber will work in this recipe. To process leafy greens, pack them into a tight bundle and fill the feed tube before juicing. You can roll leaves up like a cigar, layering small leaves inside bigger ones. This is especially important for centrifugal juicers.
Instructions
- On low speed, process kiwi through juicer into storage container or serving glass. Increase speed to high. In order listed, process remaining ingredients. Stir to combine before serving.

Why This Recipe Works
While green juices can be dense with vegetal bulk, this lighter and brighter take relies on cucumber, kiwi, and spinach as our green produce. Cucumber and kiwi are similarly aromatic, with one savory and the other sweet. Their complementary flavors combined to create an entirely new one that landed somewhere in the middle. Plus, they produced a lot of liquid to create a light, refreshing mixture. Fragrant fresh mint added a coolness and tied the flavors together, while mildly grassy spinach contributed depth, nutrition, and some subtly appealing bitterness.
