Cucumber-Dill Spritzer

Cucumber-Dill Spritzer

Ingredients

4 ounces fresh cucumber juice½ ounce Simple Syrup ¼ ounce lemon juice, plus lemon slice for garnishing2 tablespoons chopped fresh dill, plus extra dill sprig for garnishing4 ounces seltzer, chilled

Before You Begin

Using an electric juicer is the easiest way to make cucumber juice. If you don’t have a juicer, process 8 ounces English cucumber (halved lengthwise, cut into 1-inch pieces) in a food processor until finely pureed, 30 seconds to 2 minutes, scraping down the sides of the bowl as needed. Strain the mixture through a fine-mesh strainer into a bowl, pressing on the solids to extract as much liquid as possible. Rinse and dry the strainer, then strain mixture again (do not press on solids).You can garnish the drink with a cucumber spear in addition to the lemon slice and dill, if desired.

Instructions

  1. Add 4 ounces cucumber juice, ½ ounce simple syrup, ¼ ounce lemon juice, and 2 tablespoons chopped dill to cocktail shaker, then fill with ice. Shake mixture until just combined and chilled, about 5 seconds.
  2. Double-strain cocktail into chilled highball glass half-filled with ice. Add 4 ounces chilled seltzer and, using bar spoon, gently lift juice mixture from bottom of glass to top to combine. Top with additional ice. Garnish with lemon slice and dill sprig. Serve.
